Delicious Zucchini Fritters

Description

Crispy and cheesy zucchini fritters that are easy to make and perfect for any meal or snack.


Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Start by grating the zucchini. Once grated, place the zucchini in a clean kitchen towel and squeeze out the excess moisture.
  2. In a medium bowl, combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, minced garlic, salt, and pepper. Mix everything well until all the ingredients are combined.
  3. Heat some olive oil in a frying pan over medium heat. You’ll want just enough oil to coat the bottom of the pan lightly.
  4. Using a spoon, scoop out portions of the mixture and spoon them into the pan. Flatten them slightly with the back of the spoon—they don’t need to be too thin!
  5. Fry the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
  6. Once cooked, remove the fritters and place them on a paper towel to drain off any excess oil. Serve them warm.

Notes

For added flavor, serve with a dollop of sour cream, fresh herbs, or a squeeze of lemon juice.
