Crispy and cheesy zucchini fritters that are easy to make and perfect for any meal or snack.

- 2 medium zucchini, grated
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Mozzarella cheese, shredded
- 1/4 cup all-purpose flour
- 1 large egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Start by grating the zucchini. Once grated, place the zucchini in a clean kitchen towel and squeeze out the excess moisture.
- In a medium bowl, combine the grated zucchini, Parmesan cheese, Mozzarella cheese, flour, egg, minced garlic, salt, and pepper. Mix everything well until all the ingredients are combined.
- Heat some olive oil in a frying pan over medium heat. You’ll want just enough oil to coat the bottom of the pan lightly.
- Using a spoon, scoop out portions of the mixture and spoon them into the pan. Flatten them slightly with the back of the spoon—they don’t need to be too thin!
- Fry the fritters for about 3-4 minutes on each side, or until they turn golden brown and crispy.
- Once cooked, remove the fritters and place them on a paper towel to drain off any excess oil. Serve them warm.
Notes
For added flavor, serve with a dollop of sour cream, fresh herbs, or a squeeze of lemon juice.
