- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat a little olive oil in your large pot over medium heat.
- Add the chopped onions, diced carrots, and diced celery.
- Sauté these vegetables for about 5-7 minutes, or until they become tender and fragrant.
- Next, toss in the minced garlic, diced bell pepper, zucchini, and chopped green beans.
- Continue to sauté this mixture for another 5 minutes.
- Now it’s time to pour in the vegetable broth and the can of diced tomatoes, including their juices.
- Sprinkle in the dried basil, dried oregano, salt, and pepper.
- Bring everything to a gentle boil.
- Reduce the heat and let it simmer for 20-30 minutes until the vegetables are tender.
- Serve hot, garnished with your choice of toppings.
