Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat a little olive oil in your large pot over medium heat.
  2. Add the chopped onions, diced carrots, and diced celery.
  3. Sauté these vegetables for about 5-7 minutes, or until they become tender and fragrant.
  4. Next, toss in the minced garlic, diced bell pepper, zucchini, and chopped green beans.
  5. Continue to sauté this mixture for another 5 minutes.
  6. Now it’s time to pour in the vegetable broth and the can of diced tomatoes, including their juices.
  7. Sprinkle in the dried basil, dried oregano, salt, and pepper.
  8. Bring everything to a gentle boil.
  9. Reduce the heat and let it simmer for 20-30 minutes until the vegetables are tender.
  10. Serve hot, garnished with your choice of toppings.
