Description

A comforting and hearty Vegan Chicken Noodle Soup, perfect for chilly days and family gatherings.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 stalks celery, sliced
  • 3 medium carrots, peeled and sliced
  • 8 cups vegan “chicken” broth (or vegetable broth)
  • 2 cups vegan “chicken” pieces, chopped small
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 12 ounces small shaped pasta
  • Salt + pepper, to taste
  • Fresh chopped parsley, for serving
  • Crackers or French bread, for serving

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Sauté the chopped onion, minced garlic, and sliced celery for about 5 minutes until softened.
  3. Add the chopped carrots, vegan “chicken” broth, and small pieces of vegan chicken.
  4. Sprinkle in the dried basil and thyme, then bring to a boil. Reduce heat and let it simmer for about 10 minutes.
  5. Cook the small shaped pasta in a separate pot according to package instructions, reducing cooking time by one minute.
  6. Adjust the seasoning with salt and pepper to taste.
  7. Serve the soup in bowls, adding a handful of cooked noodles to each and topping with fresh parsley if desired.
  8. Store any leftovers in an airtight container, keeping noodles separate.

Notes

Don’t overcook the pasta and consider adding more veggies for extra flavor.
