Description

Ingredients

  • Boston or Butter lettuce leaves
  • 1 cup cooked lentils
  • 1 cup walnuts, chopped
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 garlic clove, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanut butter
  • 2 tablespoons maple syrup
  • 2 tablespoons lime juice
  • Water, as needed

Instructions

  1. In a mixing bowl, combine cooked lentils and chopped walnuts.
  2. Add soy sauce, sesame oil, garlic, ginger, green onions, and cilantro. Mix well.
  3. To make the peanut sauce, whisk together peanut butter, maple syrup, lime juice, and add water to thin if necessary.
  4. To serve, place a scoop of the lentil-walnut filling in each lettuce leaf, drizzle with peanut sauce, and enjoy!

Notes

Use fresh lettuce for the best crunch and don’t over-mix the filling to maintain texture.
