Ingredients

- Boston or Butter lettuce leaves
- 1 cup cooked lentils
- 1 cup walnuts, chopped
- 1 tablespoon soy sauce or tamari
- 1 tablespoon sesame oil
- 1 garlic clove, minced
- 1 teaspoon ginger, minced
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup peanut butter
- 2 tablespoons maple syrup
- 2 tablespoons lime juice
- Water, as needed
Instructions
- In a mixing bowl, combine cooked lentils and chopped walnuts.
- Add soy sauce, sesame oil, garlic, ginger, green onions, and cilantro. Mix well.
- To make the peanut sauce, whisk together peanut butter, maple syrup, lime juice, and add water to thin if necessary.
- To serve, place a scoop of the lentil-walnut filling in each lettuce leaf, drizzle with peanut sauce, and enjoy!
Notes
Use fresh lettuce for the best crunch and don’t over-mix the filling to maintain texture.
