- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 ounces each) diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- 1/2 cup heavy cream (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent (3-4 minutes).
- Stir in the diced tomatoes along with their juices and vegetable broth.
- Add the sugar, salt, and pepper to taste.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Remove from heat and stir in the fresh basil.
- Blend the mixture until smooth, adding heavy cream if desired.
- Heat through and serve warm.

Serve with warm, crusty bread or croutons for added texture.
