Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent (3-4 minutes).
  3. Stir in the diced tomatoes along with their juices and vegetable broth.
  4. Add the sugar, salt, and pepper to taste.
  5. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove from heat and stir in the fresh basil.
  7. Blend the mixture until smooth, adding heavy cream if desired.
  8. Heat through and serve warm.
