  • 1 cup diced tomatoes
  • 1 cup diced English cucumbers
  • 1 cup chopped parsley

  • 2 lemons (juiced)
  • Salt and pepper to taste

Instructions

  1. Rinse the bulgur wheat under cold water, then soak it in 2 cups of water for about 30 minutes until it’s tender. Once it’s ready, drain any excess water.
  2. Combine the diced tomatoes, cucumbers, parsley, and mint in a large bowl. This colorful mix sets the stage for your salad.
  3. Fluff the bulgur wheat with a fork and add it to the bowl with the vegetables. Tossing it all together will blend the flavors beautifully.
