- 1 cup bulgur wheat
- 2 cups water
- 1 cup diced tomatoes
- 1 cup diced English cucumbers
- 1 cup chopped parsley
- 1/2 cup chopped fresh mint
- 1/4 cup olive oil
- 2 lemons (juiced)
- Salt and pepper to taste
Instructions
- Rinse the bulgur wheat under cold water, then soak it in 2 cups of water for about 30 minutes until it’s tender. Once it’s ready, drain any excess water.
- Combine the diced tomatoes, cucumbers, parsley, and mint in a large bowl. This colorful mix sets the stage for your salad.
- Fluff the bulgur wheat with a fork and add it to the bowl with the vegetables. Tossing it all together will blend the flavors beautifully.
- Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Don’t shy away from tasting – adjust the seasoning according to your preference!
