Description

Ingredients

  • 2 cups fresh strawberries, sliced
  • 1 cup elderflower cordial
  • 1 package sponge cake or ladyfingers
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 2 tablespoons water
  • Mint leaves for garnish

Instructions

  1. Prepare the strawberries: Slice the strawberries and place them in a bowl. Drizzle 1/2 cup of elderflower cordial over the strawberries, letting them marinate for about 30 minutes.
  2. Prepare the gelatin: If using gelatin, dissolve it in water and let it bloom for 5 minutes. Then, heat it gently until melted. Mix it into the remaining elderflower cordial.
  3. Whip the cream: In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until it forms soft peaks.
  4. Layer the components: Line a cake pan with plastic wrap. Arrange a layer of sponge cake or ladyfingers at the bottom of the pan, then layer half of the marinated strawberries on top.
  5. Add the elderflower mixture: Pour half of the elderflower and gelatin mixture over the strawberries, followed by half of the whipped cream.
  6. Repeat the layers: Add another layer of cake, then the remaining strawberries, elderflower mixture, and whipped cream.
  7. Chill the dessert: Refrigerate for at least 4 hours or overnight to let it set completely.
  8. Invert the cake: Once it’s set, carefully invert the cake onto a serving platter and remove the plastic wrap.
  9. Garnish and serve: Finally, garnish with fresh mint leaves before serving.
