Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners to ensure easy removal after baking.
- Combine in a large bowl the all-purpose flour, sugar, baking powder, and salt. Mix until everything is evenly distributed.
- Beat the softened butter in a separate bowl until creamy. Add in the eggs, vanilla extract, and strawberry puree, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Continue mixing until just combined—don’t over-mix!
- Fill each cupcake liner about two-thirds full with batter, ensuring they have room to rise.
- Bake the cupcakes for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting them, as warm cupcakes can melt frosting.
- For the frosting, beat together softened butter and some strawberry puree, then gradually add powdered sugar until you achieve your desired thickness. Once ready, frost those cooled cupcakes and enjoy!
