Ingredients

  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • Fresh strawberries, for topping
  • Strawberry sauce, optional

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs with sugar and melted butter in a bowl.
  3. Press the mixture firmly into the bottom of mini muffin tins.
  4. Bake the crust for about 5 minutes, then let it cool completely.
  5. Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth.
  6. Whip the heavy cream in a separate bowl until you get stiff peaks.
  7. Fold the whipped cream into the cream cheese mixture gently.
  8. Spoon the cheesecake filling into the cooled crusts.
  9. Chill the bites in the fridge for at least 2 hours.
  10. Top each bite with fresh strawberries or drizzle with strawberry sauce before serving.
