Instructions
- Preheat your oven to 325°F (160°C).
- Combine the graham cracker crumbs with sugar and melted butter in a bowl.
- Press the mixture firmly into the bottom of mini muffin tins.
- Bake the crust for about 5 minutes, then let it cool completely.
- Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth.
- Whip the heavy cream in a separate bowl until you get stiff peaks.
- Fold the whipped cream into the cream cheese mixture gently.
- Spoon the cheesecake filling into the cooled crusts.
- Chill the bites in the fridge for at least 2 hours.
- Top each bite with fresh strawberries or drizzle with strawberry sauce before serving.
