Description

Enjoy vibrant and customizable spring rolls filled with fresh vegetables and herbs, perfect for any gathering.


Ingredients

  • 1 package rice paper spring roll wrappers
  • 1 (5 oz.) bag baby spring lettuces
  • 1 red bell pepper, cut into strips
  • 1 hothouse cucumber, sliced
  • 1 avocado, peeled and sliced
  • 1 cup shredded carrots
  • 1 cup thinly sliced purple cabbage
  • Fresh mint and basil (Thai basil recommended)
  • 1 recipe Simple Thai Peanut Sauce

Instructions

  1. Start by filling a wide bowl with at least an inch of warm water.
  2. Dip one rice paper wrap in the water and let it soak for 5 to 10 seconds.
  3. Place a handful of the spring mixes toward one end of the soaked wrap.
  4. Add your desired veggies and herbs on top.
  5. Wrap the side of the rice paper closest to your veggies over them tightly.
  6. Continue wrapping the roll until sealed.
  7. Store the rolls covered in the refrigerator until ready to eat.
  8. Cut them in half on the bias for a beautiful presentation and serve with the Simple Thai Peanut Sauce.

Notes

Store leftover spring rolls in the fridge for up to 3 days. Freeze for 2-3 months if desired.
