Description

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: lemon juice for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic to the pot. Sauté until fragrant and the onion softens, about 3-4 minutes.
  3. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  4. Add the white beans and vegetable broth, bringing everything to a boil.
  5. Reduce the heat and let the soup simmer for about 15-20 minutes.
  6. Season with salt and pepper, and add a splash of lemon juice before serving.

Notes

Serve with crusty bread or garlic bread, and consider garnishing with Parmesan or olive oil.
