Description

Delicious Snickers Energy Balls are a quick and healthy snack, perfect for curbing sweet cravings while providing an energy boost.


Ingredients

  • 1 cup rolled oats
  • 1 cup Medjool dates, pitted
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/2 cup salted peanuts, chopped
  • 1/2 cup dark chocolate chips
  • 2 tbsp coconut oil
  • 1/2 tsp flakey sea salt

Instructions

  1. Blend the base: In a food processor, combine the Medjool dates, rolled oats, honey, and peanut butter. Blend them together until the mixture is smooth and well combined.
  2. Add the crunch: Once the base is mixed, stir in the chopped salted peanuts and dark chocolate chips.
  3. Roll into balls: Take small portions of the mixture and roll them into balls, about the size of a standard golf ball. Place these on a baking sheet lined with parchment paper.
  4. Finish it off: Drizzle the rolled balls with melted coconut oil and sprinkle them with flakey sea salt.
  5. Chill: Refrigerate the energy balls for about 30 minutes before serving.

Notes

Choose ripe Medjool dates for best results. Store in the fridge for up to a week or freeze for up to three months.
