Ingredients

- 140 g brown sugar
- 3 tablespoons rapeseed oil
- 2 eggs
- 250 g rice flour (or wheat/spelt flour)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 60 g unsweetened cocoa powder
- 1/4 liter milk
- 200 g couverture chocolate
- 1 tablespoon rapeseed oil (for melting chocolate)
- White chocolate sprinkles or other sprinkles for decoration
Instructions
- Preheat your oven to 175°C (350°F) with the top/bottom heat setting on.
- Grease a donut pan for 12 donuts.
- In a mixing bowl, beat the brown sugar, oil, and eggs until light and fluffy.
- In another bowl, combine the rice flour, baking powder, baking soda, and cocoa powder.
- Gradually whisk the dry ingredients into the egg mixture, alternating with the milk until smooth.
- Fill the donut cavities about two-thirds full with batter.
- Bake the donuts for about 13 minutes, checking for doneness with a toothpick.
- Allow donuts to cool for a few minutes before flipping onto a wire rack to cool completely.
- Melt the couverture chocolate in a water bath or microwave until smooth.
- Dip the cooled donuts into the melted chocolate and sprinkle with toppings.
Notes
Store leftovers in an airtight container in the fridge for up to four days or freeze for about three months.
