Quick and delicious Sautéed Lemon Garlic Butter Shrimp Pasta with zesty flavors and buttery shrimp, perfect for busy weeknights.

- 1½ lbs Jumbo or large shrimp
- 16 ounces angel hair pasta
- 5 to 6 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp olive oil
- ½ cup grated parmesan cheese
- 1 cup fresh spinach leaves
- Juice from 2 lemons
- Salt and pepper to taste
Instructions
- Begin by bringing a large pot of salted water to a boil.
- Once the water is boiling, add the angel hair pasta. Cook for about 4-5 minutes, stirring occasionally.
- When the pasta reaches al dente, drain it and set it aside, reserving about 1 cup of pasta water.
- In a large skillet, combine the butter and olive oil over medium heat.
- Add the minced garlic, stirring frequently for about 30 seconds until it becomes fragrant.
- Toss in the shrimp and cook for about 2-3 minutes per side, until the shrimp turn pink.
- Squeeze in the juice from the lemons, and season with salt and pepper to taste.
- Add the cooked pasta to the skillet with the shrimp and garlic butter.
- Toss everything together, adding reserved pasta water until you reach your desired sauce consistency.
- Stir in the fresh spinach and parmesan cheese until the spinach wilts and cheese melts.
Notes
Serve with extra parmesan cheese, fresh parsley, and lemon wedges. Store leftovers in an airtight container for 3-4 days, or freeze for up to 2 months.
