- 1 lb medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 medium carrot, peeled and sliced
- 1 can (14 oz) diced tomatoes
- 3 cups low-sodium chicken broth
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon ground cumin
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, chopped (optional)
- Salt and pepper to taste
- Optional: 1-2 fresh chili peppers, finely chopped (for extra spice)
Instructions
- Prepare the Ingredients: Start by prepping all your ingredients. Chop the onion, garlic, bell pepper, and carrot. Rinse and devein shrimp if needed.
- Cook the Soup Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-5 minutes. Then, add minced garlic and diced bell pepper, cooking for another minute.
- Stir in the sliced carrot and cook for a couple of minutes.
- Add the Spices: Sprinkle in the chili powder, smoked paprika, cayenne pepper, and ground cumin. Stir and toast the spices for a minute.
- Pour in the can of diced tomatoes and the chicken broth. Bring to a gentle boil, then reduce heat to a simmer.
- Add the shrimp and cook for about 5 minutes, or until they turn pink and opaque.
- Finish with fresh lime juice and adjust seasoning with salt and pepper. Optionally add more cayenne for extra heat.
- Serve the soup into bowls and garnish with cilantro and chili peppers if desired.
Notes
Serve with crusty bread or warm tortillas for dipping. Leftovers can be stored in the fridge for 3-4 days.
