Ingredients

- 2 cups oats
- 1 cup protein powder
- 1/2 cup almond or peanut butter
- 1/2 cup honey or maple syrup
- 1/4 cup egg whites
- 1/2 cup nuts or seeds (optional)
- 1/2 cup dried fruit (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix together the oats, protein powder, and salt in a large bowl.
- Combine the nut butter, honey or maple syrup, egg whites, and vanilla extract until smooth in a separate bowl.
- Pour the wet mixture over the dry ingredients and stir until everything is well combined.
- Fold in the nuts/seeds and dried fruit if using.
- Spread the mixture onto the prepared baking sheet, pressing down firmly to form clusters.
- Bake for about 15-20 minutes, or until golden brown, stirring halfway through.
- Remove from the oven and let cool completely before breaking into clusters. Store in an airtight container.
Notes
Can serve with yogurt, smoothie bowls, or mixed into oatmeal. The clusters can be frozen for up to three months.
