Instructions

  1. Peel and cut the potatoes into fries. Aim for uniform sizes to ensure even cooking.
  2. Soak the fries in cold water for at least 30 minutes. This step helps remove excess starch—an important trick for crispy fries!
  3. Drain the fries and pat them dry with a paper towel. You want them as moisture-free as possible before frying.
  4. Heat oil in a deep fryer or large pot to 350°F (175°C). Use a thermometer or drop a small piece of potato in to test; it should sizzle when ready.
  5. Fry the potatoes in batches. This keeps the temperature steady and allows the fries to crisp up beautifully. Fry them for about 5-6 minutes per batch until they turn golden brown and crispy.
  6. Remove the fries and drain them on paper towels. While they’re still hot, season them immediately with Cajun seasoning and salt. The heat will help the seasoning stick!
