Ingredients

  • 1 cup frozen pineapple chunks
  • 1 frozen banana, peeled prior to freezing
  • 1/4 cup frozen coconut chunks, or 34 tablespoons shredded coconut
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • 1/2 cup coconut milk

Instructions

  1. Add all ingredients to a high-powered blender.
  2. Blend ingredients until smooth and creamy. If you notice it getting too thick, you can add more coconut milk.
  3. Transfer the smoothie to a bowl once you reach the desired consistency.
  4. Add your favorite toppings such as granola, coconut flakes, fresh pineapple, and sliced banana.

Notes

For a thicker consistency, use the smallest amount of liquid as possible to get the blades moving. Experiment with toppings for different flavors.
