Ingredients

- 1 cup frozen pineapple chunks
- 1 frozen banana, peeled prior to freezing
- 1/4 cup frozen coconut chunks, or 3–4 tablespoons shredded coconut
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- 1/2 cup coconut milk
Instructions
- Add all ingredients to a high-powered blender.
- Blend ingredients until smooth and creamy. If you notice it getting too thick, you can add more coconut milk.
- Transfer the smoothie to a bowl once you reach the desired consistency.
- Add your favorite toppings such as granola, coconut flakes, fresh pineapple, and sliced banana.
Notes
For a thicker consistency, use the smallest amount of liquid as possible to get the blades moving. Experiment with toppings for different flavors.
