Description

A delightful and easy-to-make Pepper Steak that combines tender ribeye, colorful peppers, and a savory sauce, perfect for family gatherings and busy weeknights.

Ingredients

Scale
  • 2 lbs Ribeye steak (cut into 2-inch long thin slices)
  • 1 red bell pepper (chopped into bite-size pieces)
  • 1 green bell pepper (chopped into bite-size pieces)
  • 1 medium white onion (chopped into bite-size pieces)
  • 2 tbsp vegetable oil (divided in half)
  • 3 cloves garlic (minced)
  • 1 tsp black pepper
  • ½ tsp ginger (minced)
  • 2 tbsp brown sugar
  • ⅓ cup soy sauce
  • 1¼ cups beef broth
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp cornstarch

Instructions

  1. Start by heating 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, add the ribeye steak slices to the pan. Cook for 5-6 minutes or until the steak becomes golden brown and lightly crispy. When it’s done, remove the steak from the skillet and place it on a plate.
  2. In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the chopped bell peppers and onions. Cook them for 3-4 minutes until they soften beautifully.
  3. Return the cooked steak back into the skillet with the veggies.
  4. While that’s happening, grab a medium bowl and combine the minced garlic, black pepper, ginger, brown sugar, soy sauce, beef broth, rice vinegar, sesame oil, and cornstarch. Mix until everything is well combined.
  5. Pour this mixture over the steak and veggies in the skillet. Bring everything to a simmer and allow it to cook for about 4-5 minutes, until the sauce thickens up nicely.
  6. Serve this delicious dish hot over a bed of fluffy rice, and toss on some sesame seeds for that extra flair. Enjoy every bite!

Notes

Serve over steamed rice or quinoa for a delightful meal. Add steamed broccoli or green beans for color and nutrition.
