Description

A delightful Pecan Vanilla Dessert combining crunchy pecans, creamy vanilla, and a luscious praline topping, perfect for any gathering.


Ingredients

  • 1 cup pecans, finely chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar for praline
  • 1 tablespoon coffee granules
  • 1 cup heavy cream
  • 2 teaspoons gelatin
  • 1/2 cup vanilla bean paste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a cake pan.
  2. Mix together the chopped pecans, flour, sugar, softened butter, and salt in a bowl. Press mixture into bottom of prepared pan. Bake for 10-12 minutes or until golden brown.
  3. Beat the eggs with the milk and vanilla extract. Gradually fold into the flour mixture to create a smooth batter. Pour over baked shortbread base and return to oven for 20-25 minutes, or until a toothpick inserted comes out clean.
  4. Heat the sugar in a saucepan over medium heat until caramelized. Stir in coffee granules and remaining chopped pecans. Pour onto parchment-lined sheet and cool before breaking into pieces.
  5. Dissolve the gelatin in warm water. Mix with vanilla bean paste and whip the heavy cream to soft peaks. Fold whipped cream into gelatin mixture along with praline.
  6. Layer the vanilla cake in a serving dish, then layer with praline mixture and top with bavarois. Cover and refrigerate until set.
  7. Serve the dessert chilled, garnished with additional praline and pecans.

Notes

This dessert pairs well with vanilla ice cream or whipped cream. Can be stored in the refrigerator for 3-4 days or frozen for up to 2-3 months.
