Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup champagne
  • 1/2 cup peach puree
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 tablespoons heavy cream
  • Fresh peach slices (for garnish)
  • Sparkling sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, and salt until well combined.
  3. Beat together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Add the dry ingredients to the wet ingredients, alternating with champagne and peach puree, starting and ending with dry ingredients, mixing just until blended.
  5. Fill the cupcake liners about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely in the pan.
  7. Beat together the softened butter and powdered sugar for the frosting until creamy. Add the heavy cream and beat until smooth and fluffy.
  8. Frost each cooled cupcake generously with the peach buttercream.
  9. Garnish with fresh peach slices and a sprinkle of sparkling sugar just before serving.

Notes

For a non-alcoholic version, substitute champagne with sparkling apple cider or sparkling water.
