Ingredients

- 1 cup raw almonds
- 1 cup raw cashews
- 1/3 cup raw pumpkin seeds
- 1/3 cup raw sunflower seeds
- 1/4 cup unsweetened coconut flakes
- 1/4 cup virgin coconut oil
- 1/3 cup organic honey
- 1 tsp. pure vanilla extract
- Pinch of sea salt
- 2 tsp. ground cinnamon
- 3/4 cup dried cranberries or cherries
Instructions
- Preheat your oven to 275°F.
- Add the almonds, cashews, and coconut flakes to a food processor and chop into small pieces.
- Heat the coconut oil, honey, cinnamon, and salt in a large saucepan over medium-high heat for 3-5 minutes.
- Remove the saucepan from heat and stir in the vanilla extract.
- Mix in the chopped seeds, nuts, and coconut flakes until coated.
- Spread the granola mixture evenly on a lined baking sheet.
- Bake for 20-25 minutes, monitoring closely until lightly browned.
- Add the dried cranberries, pressing them gently into the warm granola.
- Allow to cool for 20 minutes before breaking into clusters.
- Store in an airtight container for up to 2 weeks.
