Delicious mini cheesecake bites made with Oreo cookies and a creamy filling, perfect for gatherings.
Ingredients

- 16 Oreos
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 whole eggs
- 1 tsp vanilla extract
- 3/4 cup Oreo cookie crumbs (both large and small)
Instructions
- Preheat your oven to 350°F. Line a regular cupcake pan with 16 paper liners and place one Oreo cookie in the bottom of each.
- Beat together the softened cream cheese, sugar, eggs, and vanilla extract in a large mixing bowl until smooth and creamy, about 2-3 minutes.
- Fold in the chopped Oreo cookie crumbs gently using a spatula.
- Scoop about two tablespoons of the cheesecake mixture into each cupcake liner on top of the Oreos. Sprinkle with reserved cookie crumbs on top.
- Bake for about 14-16 minutes, or until the middle appears set.
- Cool for at least 30 minutes, then refrigerate for about 2 hours before serving.
Notes
Top with whipped cream and crushed Oreos before serving for an extra treat.
