Oreo Cheesecake Bites

Description

Delicious mini cheesecake bites made with Oreo cookies and a creamy filling, perfect for gatherings.


Ingredients

  • 16 Oreos
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 whole eggs
  • 1 tsp vanilla extract
  • 3/4 cup Oreo cookie crumbs (both large and small)

Instructions

  1. Preheat your oven to 350°F. Line a regular cupcake pan with 16 paper liners and place one Oreo cookie in the bottom of each.
  2. Beat together the softened cream cheese, sugar, eggs, and vanilla extract in a large mixing bowl until smooth and creamy, about 2-3 minutes.
  3. Fold in the chopped Oreo cookie crumbs gently using a spatula.
  4. Scoop about two tablespoons of the cheesecake mixture into each cupcake liner on top of the Oreos. Sprinkle with reserved cookie crumbs on top.
  5. Bake for about 14-16 minutes, or until the middle appears set.
  6. Cool for at least 30 minutes, then refrigerate for about 2 hours before serving.

Notes

Top with whipped cream and crushed Oreos before serving for an extra treat.
