Description

Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 mini peanut butter cups, chopped
  • Whipped cream (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.
  2. Combine the crushed graham crackers, sugar, and melted butter in a bowl. Mix them well and then press the mixture into the bottom of each muffin liner to create the crust.
  3. Beat together the softened cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
  4. Fold in the chopped mini peanut butter cups, ensuring they’re evenly distributed throughout the mixture.
  5. Spoon the cheesecake mixture over the crusts in the muffin tin, filling each liner about 3/4 full.
  6. Bake for 15-20 minutes, keeping an eye out for a perfect set; they should be firm but slightly jiggly in the center.
  7. Cool them down, then refrigerate for at least 2 hours to set nicely.
  8. Serve topped with whipped cream and extra mini peanut butter cups if desired!
