Instructions
- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
- Whisk the egg whites in a clean mixing bowl until soft peaks form.
- Add the granulated sugar gradually, continuing to whisk until stiff peaks form.
- Stir in the vanilla extract.
- Pipe small mounds of the meringue onto the prepared baking sheet.
- Bake for about 1-1.5 hours, or until dry to the touch.
- Cool the meringues completely on the baking sheet.
- Fill the meringues with citrus curd and top with fresh fruit and mint leaves.
- Dust with powdered sugar before serving.
Notes
Store unfilled meringues in an airtight container at room temperature for up to a week. Avoid filling until just before serving.
