Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. Whisk the egg whites in a clean mixing bowl until soft peaks form.
  3. Add the granulated sugar gradually, continuing to whisk until stiff peaks form.
  4. Stir in the vanilla extract.
  5. Pipe small mounds of the meringue onto the prepared baking sheet.
  6. Bake for about 1-1.5 hours, or until dry to the touch.
  7. Cool the meringues completely on the baking sheet.
  8. Fill the meringues with citrus curd and top with fresh fruit and mint leaves.
  9. Dust with powdered sugar before serving.
