- 1 package Oreo cookies
- 2 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C).
- Crush the Oreo cookies and mix them with the melted butter until well combined. Press this mixture into the bottom of cupcake liners placed in a muffin tin.
- Beat the cream cheese and sugar together until creamy and smooth.
- Add the eggs one at a time, mixing well after each addition. Then, toss in the vanilla extract and give it a good mix.
- Fold in the chocolate chips, ensuring they’re evenly distributed.
- Divide the cream cheese mixture over the Oreo crusts in the muffin tin.
- Bake for 20-25 minutes until set.
- Cool for a bit, then refrigerate for at least 2 hours.
- Heat the heavy cream in a saucepan over low heat until it just begins to simmer. Pour it over the chocolate chips and stir until smooth.
- Pour the ganache over the cooled cheesecakes.
- Serve and enjoy!
