Delightful tartlets inspired by the Miffy character, filled with a creamy strawberry cheesecake mixture.

- 12 small tart shells, baked
- 14g butter
- 60g pink marshmallows
- 88g cream cheese
- 85g white chocolate
- 6 tbsp strawberry jam
- 190ml cream
- 1/4 cup additional strawberry jam for core
- 12 strawberries, sliced
- 200ml whipping cream
- 100g mascarpone
- Powdered sugar to taste
Instructions
- Melt the Mixture: In a medium saucepan over low heat, melt together the butter, marshmallows, cream cheese, and white chocolate. Stir occasionally, as this may take a few minutes to combine smoothly.
- Mix with Strawberry Jam: Once melted, transfer the mixture to a glass bowl. Stir in the strawberry jam until well blended. Allow this delightful concoction to cool down for a bit.
- Whip the Cream: In another bowl, whip 190ml of cream until you reach soft peaks. This means the cream should hold its shape but still have a slight softness to it.
- Combine the Mixtures: Gently fold the whipped cream into the strawberry cream cheese mixture. Aim for a smooth and fluffy texture. Now, cover the bowl and set it in the refrigerator for about 30 minutes to firm up.
- Fill the Tart Shells: After chilling, transfer the cream mixture to a piping bag. Fill each tart shell generously, giving them a lovely cream top. If you wish, you can pipe or spoon in a little more strawberry jam on top for an extra burst of flavor.
- Prepare the Topping: In another bowl, whip the remaining 200ml cream together with the mascarpone and some powdered sugar to your taste until you reach stiff peaks. This creates a rich and creamy topping.
- Decorate the Tartlets: Using a cookie scoop, add playful domes of the whipped cream mixture on top of each tartlet. Finally, get creative and decorate them with melted chocolate and fondant to resemble the adorable Miffy character.
Notes
Store tartlets in an airtight container in the refrigerator for up to 3 days. Freeze before adding whipped cream topping for longer storage.
