- 4 large flour tortillas
- 1 cup cream cheese, softened
- 1 cup baby spinach, chopped
- ½ cup sun-dried tomatoes, chopped
- ½ cup Kalamata olives, chopped
- ½ cup feta cheese, crumbled
- 2 tablespoons fresh basil, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Combine the softened cream cheese, lemon juice, and a sprinkle of salt and pepper in a mixing bowl. Mix everything until smooth.
- Add the chopped spinach, sun-dried tomatoes, Kalamata olives, feta cheese, and fresh basil. Stir until well combined.
- Lay one tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture over the surface, leaving a small border around the edges.
- Starting at one end, roll the tortilla tightly. Don’t worry if some filling peeks out.
- Slice the rolled tortilla into pinwheels, about 1-inch thick. Place them cut-side up on a serving platter.
- Repeat the process with the remaining tortillas.
- Serve immediately, or cover and refrigerate until ready to impress your guests.
