Ingredients

  • 4 large flour tortillas
  • 1 cup cream cheese, softened
  • 1 cup baby spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup Kalamata olives, chopped
  • ½ cup feta cheese, crumbled
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the softened cream cheese, lemon juice, and a sprinkle of salt and pepper in a mixing bowl. Mix everything until smooth.
  2. Add the chopped spinach, sun-dried tomatoes, Kalamata olives, feta cheese, and fresh basil. Stir until well combined.
  3. Lay one tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture over the surface, leaving a small border around the edges.
  4. Starting at one end, roll the tortilla tightly. Don’t worry if some filling peeks out.
  5. Slice the rolled tortilla into pinwheels, about 1-inch thick. Place them cut-side up on a serving platter.
  6. Repeat the process with the remaining tortillas.
  7. Serve immediately, or cover and refrigerate until ready to impress your guests.
