Instructions
- Marinate the Chicken: In a bowl, mix the olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes. Add the chicken and coat it well. Let it marinate for at least 15 minutes while you prepare other ingredients.
- Prepare the Tzatziki: In another bowl, combine the Greek yogurt, grated cucumber (after squeezing out excess liquid), additional lemon juice, olive oil, minced garlic, salt, and dill. Mix well and set it aside in the fridge to let the flavors meld.
- Cook the Chicken: Heat a grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C). Let it rest for a few minutes, then slice it into strips.
- Assemble the Bowl: In a large serving bowl, start with a base of cooked rice. Layer on the diced tomatoes, diced cucumbers, shredded lettuce, sliced red onion, and top with the sliced chicken. Drizzle the tzatziki generously over everything. Sprinkle crumbled feta cheese on top and garnish with fresh parsley.
