Description

A delightful shrimp pasta dish with a creamy sauce and rich flavors of sun-dried tomatoes and garlic, perfect for family gatherings.


Ingredients

  • 1 lb Large shrimp, peeled and deveined (Fresh or frozen, thawed)
  • 10 oz Linguine or fettuccine pasta (Al dente)
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1/2 tsp Red pepper flakes (Adjust to taste)
  • 1/2 cup Sun-dried tomatoes, chopped
  • 1 cup Heavy cream (Or coconut cream for dairy-free)
  • 1/2 cup Grated Parmesan cheese (Freshly grated)
  • 1/2 cup Chicken broth or white wine
  • 2 tbsp Butter
  • 1 tbsp Fresh basil, chopped (For garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente, following the package instructions. Don’t forget to reserve 1/2 cup of pasta water before draining!
  2. While the pasta boils, heat the olive oil in a skillet over medium-high heat. Add the garlic and red pepper flakes. Sauté for about a minute until the garlic becomes fragrant.
  3. Toss the shrimp into the skillet and sear them until they turn pink. This should take about 2-3 minutes.
  4. Next, reduce the heat and add the butter to the skillet. Once it melts, mix in the chopped sun-dried tomatoes and chicken broth (or white wine). Let it simmer for a couple of minutes to meld the flavors.
  5. Pour in the heavy cream and sprinkle the grated Parmesan cheese into the skillet. Stir until the sauce thickens, about 3-5 minutes.
  6. Get your shrimp back into the pan, then toss in the drained pasta. If the sauce seems too thick, add some of the reserved pasta water to achieve your desired consistency.
  7. Garnish your dish with fresh basil just before serving, and get ready for the compliments to roll in!

Notes

Serve with a crisp green salad or garlic bread for a complete meal.
