Ingredients

- 1 head of cabbage, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 stalks of celery, diced
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 6 cups of vegetable broth
- 1 can of diced tomatoes
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 tablespoon of olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is soft and fragrant.
- Toss in the diced carrots, celery, and bell pepper. Cook until they start to become tender.
- Stir in the chopped cabbage and let it cook for a few more minutes until it’s slightly wilted.
- Pour in the vegetable broth and add the canned diced tomatoes.
- Season the mixture with thyme, salt, and pepper.
- Bring everything to a boil, then reduce the heat and let it simmer for about 30 minutes, or until all the vegetables are tender.
