Ingredients

  • 2 carrots, diced

  • 1 bell pepper, diced
  • 2 stalks celery, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Cream (for serving)

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, bell pepper, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in the cumin and paprika, cooking for an additional minute.
  4. Add the lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 30-40 minutes or until the lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with a dollop of cream.

Notes
