Ingredients

- 1 cup lentils
- 2 carrots, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 stalks celery, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
- Cream (for serving)
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, bell pepper, and celery; sauté until softened, about 5-7 minutes.
- Stir in the cumin and paprika, cooking for an additional minute.
- Add the lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 30-40 minutes or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, topped with a dollop of cream.
Notes
This stew pairs wonderfully with bread or a side salad. It keeps well in the fridge for meal prep.
