Lamb Koftas with Yoghurt Dressing

Description

Delicious and juicy lamb koftas infused with warm spices, served with a tangy yogurt dressing, perfect for any occasion.


Ingredients

  • 1 lb / 500 g lamb mince (ground lamb)
  • 1/2 onion, grated
  • 1/4 cup breadcrumbs (preferably panko)
  • 2 cloves garlic, crushed
  • 2 tbsp chopped fresh coriander
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp paprika
  • 1.5 tsp ground cinnamon
  • 3/4 tsp cayenne pepper (adjust to taste)
  • 1 tsp cooking / kosher salt
  • 1/2 tsp black pepper
  • 1 cup yogurt (Greek or thick plain)
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic, crushed
  • 1 tsp cumin
  • 1 tbsp lemon juice
  • 1/4 tsp salt and pepper (each)
  • 8 skewers
  • 8 small flatbreads
  • Shredded Red Cabbage, Carrot and Mint Salad or shredded lettuce, tomato, and onion slices

Instructions

  1. Start by making the yogurt sauce. Combine the yogurt, crushed garlic, cumin, lemon juice, salt, and pepper in a bowl. Mix everything well and let it chill in the fridge for at least 20 minutes.
  2. Grate the onion into a bowl using a standard box grater. Add the lamb mince, breadcrumbs, crushed garlic, chopped coriander, cumin, coriander, paprika, cinnamon, cayenne pepper, salt, and black pepper. Mix it all up with your hands.
  3. Divide the mixture into 8 equal pieces. Using damp hands, shape the meat around the 8 skewers.
  4. Preheat the grill to medium-high heat, oil the grates, and cook the koftas for about 10-12 minutes, turning occasionally until browned and cooked through.
  5. Serve the koftas on flatbreads and drizzle the yogurt dressing over the top. Add salad for crunch and freshness.

Notes

Use damp hands when shaping the koftas to prevent sticking. You can customize with different meats or make a vegetarian version using chickpeas or lentils.
