- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Prepare the meat mixture: In a large mixing bowl, combine the ground meat with the grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, salt, and pepper. Use your hands to mix everything together until well combined.
- Shape the kafta: With wet hands, take small portions of the meat mixture and shape them into oval patties or long logs, about 4-5 inches long.
- Preheat your grill: If you’re grilling on an outdoor barbecue, preheat it to medium-high heat. For indoor grilling, heat a grill pan over medium heat and drizzle a bit of olive oil to prevent sticking.
- Cook the kafta: Place the kafta on the grill and cook for about 5-7 minutes on each side, or until they develop a nice char and are cooked through. Use a meat thermometer if you want to ensure they reach an internal temperature of 160°F.
- Serve and enjoy: Once they’re golden brown and fragrant, remove them from the grill and let them rest for a few minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Kafta freezes well, lasting 2-3 months in the freezer.
