- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 4 cups water or chicken broth
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, grated
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 tablespoons Kabsa spice mix (or a combination of cumin, coriander, cardamom, and cinnamon)
- Salt to taste
- Olive oil
- Fresh cilantro for garnish
Instructions
- Start by rinsing the basmati rice under cold water until the water runs clear. This helps remove excess starch for fluffy rice. Once rinsed, soak it in water for 30 minutes.
- In a large pot, pour in some olive oil and heat it over medium heat. Add the chopped onions and sauté until they turn translucent, about 5 minutes.
- Toss in the minced garlic and continue sautéing for another minute until fragrant.
- Now, it’s time to add the chicken pieces. Brown them on all sides to lock in flavors.
- Stir in the diced tomatoes, grated carrots, raisins, Kabsa spice mix, and a sprinkling of salt. Let this cook together for about 5 minutes.
- Pour in the water or chicken broth, bring everything to a boil, then reduce the heat to a simmer. Cover the pot and let it cook until the chicken is tender, about 30-40 minutes.
- Once the chicken is cooked, take it out and set aside.
- Stir in the soaked rice into the pot with the remaining broth. Bring it back to a boil, cover, and reduce the heat to low. Cook for 15-20 minutes until the rice is tender and has absorbed all the liquid.
- After that, take a fork and fluff the rice gently before arranging the chicken pieces on top.
- Finally, garnish with slivered almonds and fresh cilantro.
Notes
Serve with a fresh salad or yogurt for added freshness. Kabsa can be stored in the fridge for up to 3 days or frozen for up to 3 months.
