Ingredients

- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- Water (as needed)
- 2 cups potatoes (boiled and mashed)
- 1 cup green peas (cooked)
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon chili powder
- Salt to taste
- Oil for frying
Instructions
- Prepare the Dough: In a mixing bowl, combine the flour, salt, and vegetable oil. Use your hands to mix these ingredients together. Gradually add water until the mixture forms a soft dough. Knead it for about five minutes until smooth, then wrap it in a cloth and let it rest.
- Make the Filling: In another pan, heat a little oil over medium heat. Sprinkle in the cumin seeds and let them splutter. Now, add the boiled and mashed potatoes along with the cooked peas. Sprinkle in the garam masala, coriander powder, chili powder, and salt to taste. Mix everything well and cook for a few minutes, allowing the flavors to meld together. After cooking, set the filling aside to cool.
- Shape the Samosas: Once the dough has rested, divide it into small balls. Roll each ball into a thin circle about six inches in diameter. Cut each circle in half to create two semi-circles.
- Forming the Samosas: Take one semi-circle and create a cone shape by folding it and sealing the edge with a little water. Fill the cone with your potato mixture, then seal the open edge with water to hold it closed. Repeat this process until you’ve used up your dough and filling.
- Fry the Samosas: Heat oil in a frying pan over medium heat. Once hot, gently slide in the samosas, a few at a time, frying them until they turn golden brown and crispy. This usually takes about 5-7 minutes. Remove them with a slotted spoon and place them on paper towels to drain excess oil. Serve them hot with your favorite chutney!
Notes
For additional flavor, pair samosas with mint chutney or tamarind sauce. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
