Ingredients

  • 4 medium sweet potatoes
  • 1 pound lean ground beef (85–90%)
  • 1/4 cup hot honey (divided)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1/2 cup crumbled feta or goat cheese (optional)
  • 2 green onions, sliced
  • 1 tablespoon lime juice
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes lengthwise and score the flesh. Brush the open side with olive oil and sprinkle with salt and pepper.
  3. Place them cut-side down on the prepared baking sheet and roast for 30-40 minutes until they are fork-tender.
  4. Heat the remaining olive oil in a skillet over medium heat. Sauté the diced onion for about 3-4 minutes until soft and translucent.
  5. Add the minced garlic to the skillet and cook for another 30 seconds until fragrant.
  6. Add the lean ground beef to the skillet and brown it for about 6-8 minutes. Drain any excess grease if necessary.
  7. Stir in the smoked paprika, cumin, chili flakes, salt, and black pepper. Cook for another minute.
  8. Mix in any reserved mashed sweet potato flesh with the beef mixture, if desired.
  9. Drizzle in 2 tablespoons of hot honey and simmer for 2-3 minutes.
  10. Once the sweet potatoes are roasted, carefully scoop a small portion from the center to create a boat and fill with the savory beef mixture.
  11. Return the filled sweet potatoes to the oven and bake for an additional 5-7 minutes.
  12. Remove from the oven and top with remaining hot honey, crumbled cheese, herbs, green onions, lime juice, and avocado.
  13. Let the boats rest for about 5 minutes before serving.

Notes

Serve with a side salad or grains like rice or quinoa for a complete meal. Leftovers can be stored in the refrigerator for 3-5 days.
