- 4 medium sweet potatoes
- 1 pound lean ground beef (85–90%)
- 1/4 cup hot honey (divided)
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili flakes
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil (divided)
- 2 tablespoons fresh parsley or cilantro, chopped
- 1/2 cup crumbled feta or goat cheese (optional)
- 2 green onions, sliced
- 1 tablespoon lime juice
- 1 avocado, sliced (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the sweet potatoes lengthwise and score the flesh. Brush the open side with olive oil and sprinkle with salt and pepper.
- Place them cut-side down on the prepared baking sheet and roast for 30-40 minutes until they are fork-tender.
- Heat the remaining olive oil in a skillet over medium heat. Sauté the diced onion for about 3-4 minutes until soft and translucent.
- Add the minced garlic to the skillet and cook for another 30 seconds until fragrant.
- Add the lean ground beef to the skillet and brown it for about 6-8 minutes. Drain any excess grease if necessary.
- Stir in the smoked paprika, cumin, chili flakes, salt, and black pepper. Cook for another minute.
- Mix in any reserved mashed sweet potato flesh with the beef mixture, if desired.
- Drizzle in 2 tablespoons of hot honey and simmer for 2-3 minutes.
- Once the sweet potatoes are roasted, carefully scoop a small portion from the center to create a boat and fill with the savory beef mixture.
- Return the filled sweet potatoes to the oven and bake for an additional 5-7 minutes.
- Remove from the oven and top with remaining hot honey, crumbled cheese, herbs, green onions, lime juice, and avocado.
- Let the boats rest for about 5 minutes before serving.
Notes
Serve with a side salad or grains like rice or quinoa for a complete meal. Leftovers can be stored in the refrigerator for 3-5 days.
