- 4 tablespoons whole milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with festive liners.
- Cream together the room temperature butter, oil, and sugar until the mixture turns light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Whisk together the cake flour, salt, and baking powder in another bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
- Fold in the rainbow sprinkles gently.
- Divide the batter evenly among the cupcake liners, filling them about two-thirds full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the cupcakes to cool completely before frosting them.
- Beat together the soft butter, powdered sugar, vanilla extract, salt, and whole milk for the frosting until it’s smooth and creamy.
- Frost the cooled cupcakes and sprinkle additional rainbow sprinkles on top if desired.
Notes
Store leftover cupcakes in an airtight container at room temperature for up to three days. For longer storage, wrap tightly in plastic wrap and freeze for up to three months.
