- 4 chicken breasts
- 1 cup ricotta cheese
- 1 cup spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons fresh herbs (such as basil or parsley), chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil
- 1/2 cup marinara sauce (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Grab a mixing bowl and combine the ricotta cheese, chopped spinach, shredded mozzarella cheese, fresh herbs, minced garlic, and a pinch of salt and pepper. Mix everything until it’s well blended.
- Lay the chicken breasts flat on a clean surface. Place a generous amount of the ricotta mixture in the center of each breast.
- Roll the chicken breasts tightly around the filling and secure them with toothpicks to keep everything in.
- Heat a splash of olive oil in an oven-safe skillet over medium heat.
- Once hot, sear the chicken rolls on both sides until they turn golden brown.
- If you’re using marinara sauce, pour it over the chicken rolls now.
- Transfer the skillet to your preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked through.
- Once done, serve the chicken rolls hot alongside a refreshing side salad.
