Healthy Zucchini Fritters

Description

Delicious and healthy zucchini fritters, perfect as a side dish or snack that the whole family will love.


Ingredients

  • 2 medium zucchinis, grated
  • 2 large eggs
  • 1/4 cup oat flour or almond flour
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup plain Greek yogurt or cottage cheese
  • 1 garlic clove, finely minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or thyme
  • 2 tbsp chopped fresh parsley or dill
  • 1 tbsp olive oil or olive oil spray

Instructions

  1. Start by grating the zucchini using a box grater or food processor.
  2. Next, place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture.
  3. In a mixing bowl, combine the grated zucchini, eggs, oat flour (or almond flour), Parmesan cheese, Greek yogurt (or cottage cheese), minced garlic, sea salt, black pepper, dried oregano or thyme, and chopped herbs. Mix everything until a batter forms.
  4. Grab your non-stick skillet and heat it over medium heat. Add a little olive oil or spray the pan with olive oil.
  5. Using a measuring cup, scoop about ¼ cup of the batter into the skillet. Flatten each scoop slightly with the back of the cup.
  6. Cook the fritters for about 3-4 minutes on each side until they’re golden brown and cooked through.
  7. Once done, drain the fritters on paper towels to remove any excess oil and serve them warm.

Notes

For a creamier texture, serve with Greek yogurt or sour cream. Can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
