- 3 cups rolled oats (gluten free)
- ½ cup unsweetened cocoa powder
- ⅓ cup Truvia (or coconut sugar)
- ½ cup shredded coconut (unsweetened)
- ½ cup raw almonds (chopped)
- ¼ cup walnuts (chopped)
- 1 tbsp chia seeds
- ½ tsp salt
- ½ cup coconut oil
- ¼ cup maple syrup
- 1 tsp vanilla extract
- ½ cup chocolate chips
Instructions
- Preheat your oven to 275°F (135°C) and prepare two baking pans by spraying them with non-stick spray.
- In a large mixing bowl, stir together the rolled oats, cocoa powder, Truvia, shredded coconut, chopped almonds, chopped walnuts, chia seeds, and salt.
- In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract. Give it a good stir.
- Pour the wet ingredients into the dry ingredients. Stir until every single oat is coated.
- Spread the granola mixture evenly across the prepared baking pans. Pop them in the oven and bake for about 40-45 minutes, stirring every 15 minutes.
- When the granola turns golden brown, remove it from the oven and let it cool. Once cooled, mix in the chocolate chips.
- Store your granola in an airtight container, and enjoy!
Notes
For best results, let the granola cool completely before storing to maintain its crispiness. You can experiment with various add-ins like seeds or dried fruits.
