A delicious and guilt-free chocolate granola that’s gluten-free, vegan, and perfect for breakfasts or snacks.


Ingredients

  • 3 cups rolled oats (gluten free)
  • ½ cup unsweetened cocoa powder
  • ⅓ cup Truvia (or coconut sugar)
  • ½ cup shredded coconut (unsweetened)
  • ½ cup raw almonds (chopped)
  • ¼ cup walnuts (chopped)
  • 1 tbsp chia seeds
  • ½ tsp salt
  • ½ cup coconut oil
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 275°F (135°C) and prepare two baking pans by spraying them with non-stick spray.
  2. In a large mixing bowl, stir together the rolled oats, cocoa powder, Truvia, shredded coconut, chopped almonds, chopped walnuts, chia seeds, and salt.
  3. In a separate bowl, combine the melted coconut oil, maple syrup, and vanilla extract. Give it a good stir.
  4. Pour the wet ingredients into the dry ingredients. Stir until every single oat is coated.
  5. Spread the granola mixture evenly across the prepared baking pans. Pop them in the oven and bake for about 40-45 minutes, stirring every 15 minutes.
  6. When the granola turns golden brown, remove it from the oven and let it cool. Once cooled, mix in the chocolate chips.
  7. Store your granola in an airtight container, and enjoy!

Notes

For best results, let the granola cool completely before storing to maintain its crispiness. You can experiment with various add-ins like seeds or dried fruits.
