Description

Ingredients

  • 8 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Start by cooking the pasta according to the package instructions. Make sure to salt the water for better flavor. Once cooked, reserve about a cup of pasta water before draining and set the pasta aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, and add them to the skillet. Cook for about 6-7 minutes on each side or until they’re cooked through and golden brown. Remove the chicken from the pan and let it rest for a few minutes before slicing it.
  3. In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant, making sure it doesn’t brown.
  4. Pour in the heavy cream, stirring gently to combine, and bring it to a gentle simmer. This is where the magic happens!
  5. Gradually whisk in the Parmesan cheese, continually stirring until the sauce is thick, creamy, and delicious. Add salt and pepper to taste.
  6. Toss the cooked pasta into the sauce. If it seems too thick, add a little of the reserved pasta water until you reach your desired consistency.
  7. Finally, add the sliced chicken on top. Garnish with fresh parsley before serving.

Notes

For a veggie-packed Alfredo, add steamed broccoli, spinach, or mushrooms. Pair with a fresh side salad or garlic bread.
