Delicious and nutritious chocolate energy bites made with dates and almonds, perfect for a quick snack.
Ingredients

- 1 1/2 cups Medjool dates (pitted)
- 1 cup raw almonds
- 3 tablespoons cocoa powder (or cacao powder)
- 1/2 teaspoon pure vanilla extract
- 2–3 pinches sea salt
- 2–3 teaspoons water
Instructions
- Begin by placing the pitted dates and raw almonds in the bowl of a food processor. Pulse it until the almonds are broken down into medium chunks.
- Next, add the cocoa powder, vanilla extract, and a couple of pinches of sea salt. Process again until the almonds get finely chopped.
- Now, assess the moisture level. Add one teaspoon of water to the mixture, processing it again. If it feels too dry, add one or two more teaspoons of water until you can squeeze the mixture together with your hand.
- Use a tablespoon to scoop out some of the date energy ball dough, and roll it into a ball using your hands.
- Arrange the date balls on a baking sheet lined with parchment paper. Stick them in the fridge for about 20 minutes to set.
- Finally, transfer the balls to an airtight container. Store these bites in your refrigerator for up to 1-2 weeks.
