Ingredients

  • 4 medium zucchini
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the center to create little boats.
  3. Heat olive oil in a skillet over medium heat, then add diced onions and minced garlic. Sauté until translucent.
  4. Add the ground beef and cook until browned, draining excess fat.
  5. Stir in marinara sauce, Italian seasoning, salt, and pepper. Cook for an additional 2-3 minutes.
  6. Fill each zucchini half with the beef mixture and place them in a baking dish.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes until the zucchini is tender and the cheese is bubbly.
