- 4 medium zucchini
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (mozzarella or cheddar)
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini in half lengthwise and scoop out the center to create little boats.
- Heat olive oil in a skillet over medium heat, then add diced onions and minced garlic. Sauté until translucent.
- Add the ground beef and cook until browned, draining excess fat.
- Stir in marinara sauce, Italian seasoning, salt, and pepper. Cook for an additional 2-3 minutes.
- Fill each zucchini half with the beef mixture and place them in a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until the zucchini is tender and the cheese is bubbly.
