- 2 medium Zucchini

- 1 cup Sour Cream or Greek Yogurt
- 2 tablespoons Fresh Herbs (Chives or Parsley)
- 2 cups Cooked Rice or Mashed Potatoes
Instructions
- Start by preheating your grill to medium-high heat.
- Slice your zucchini into rounds or strips and toss it with olive oil, garlic powder, onion powder, and seasonings.
- Rub the steak with remaining olive oil and season with salt, pepper, and optional Dijon mustard.
- Grill the zucchini for 3-4 minutes each side and steak for 4-6 minutes per side, depending on preferred doneness.
- Remove from the grill, let steak rest, and mix sour cream with herbs.
- Serve steak on rice or potatoes, topped with zucchini and sauce.
