  • 2 medium Zucchini
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard (optional)
  • 1 cup Sour Cream or Greek Yogurt
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
  • 2 cups Cooked Rice or Mashed Potatoes

Instructions

  1. Start by preheating your grill to medium-high heat.
  2. Slice your zucchini into rounds or strips and toss it with olive oil, garlic powder, onion powder, and seasonings.
  3. Rub the steak with remaining olive oil and season with salt, pepper, and optional Dijon mustard.
  4. Grill the zucchini for 3-4 minutes each side and steak for 4-6 minutes per side, depending on preferred doneness.
  5. Remove from the grill, let steak rest, and mix sour cream with herbs.
  6. Serve steak on rice or potatoes, topped with zucchini and sauce.
