- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- Tortilla chips (optional)
Instructions
- In a large bowl, combine cooked quinoa, black beans, and corn.
- Add grilled chicken, avocado, cherry tomatoes, red onion, and cilantro.
- Squeeze lime juice over the mixture and season with salt and pepper.
- Toss gently to combine.
