Description

A light and flavorful Greek Lemon Rice dish, perfect as a side for grilled meats or roasted vegetables.


Ingredients

  • 1 cup rice
  • 2 cups vegetable broth or water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill) for garnish

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  2. Add the rice to the saucepan, stirring to coat it in the oil and onions for about 2 minutes.
  3. Pour in the vegetable broth or water, and add the lemon juice, salt, and pepper. Bring the mixture to a boil.
  4. Lower the heat, cover the saucepan, and let it simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
  5. Once done, remove the saucepan from heat and let it sit, covered, for another 5 minutes.
  6. Fluff with a fork, garnish with fresh herbs, and serve!

Notes

Use fresh lemon juice for the best flavor. This dish can be made ahead of time and reheated.
