Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

- Stir in the lemon juice and zest to incorporate that fresh flavor.
- Whisk together the gluten-free flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, until everything is well combined.
- Scoop the batter into the prepared cupcake liners, filling them about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool before serving to allow flavors to develop.
