Ingredients

  • 2 large carrots, sliced
  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the diced potatoes, sliced carrots, and zucchini in a large bowl.
  3. Add olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper to the vegetables. Mix everything until it’s evenly coated.
  4. Spread the vegetable mixture in a single layer on the prepared baking sheet.
  5. Roast them for about 25-30 minutes, stirring halfway through, until they turn tender and golden brown.
  6. Garnish with freshly chopped parsley before serving warm.

Notes

For added flavor, sprinkle some grated parmesan on top or a squeeze of lemon juice before serving.
