Instructions
- Preheat your oven: Set it to 425°F (220°C).
- Prepare the potatoes: Wash your baby potatoes under cold water and cut any larger ones in half.
- Mix the seasoning: In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Toss the potatoes: Add your cut potatoes to the bowl and stir well.
- Spread on a baking sheet: Transfer the seasoned potatoes to a baking sheet in a single layer.
- Roast to perfection: Roast for about 25-30 minutes until golden brown and fork-tender.
- Garnish and serve: Remove from the oven and sprinkle with extra salt or fresh herbs.

For best results, use waxy potatoes and ensure they are spread out on the baking sheet for even roasting.
